I have two recipes for prawn cocktail. Nice as a starter, serve chilled with white wine.


Ingredients
Approx 3x 150 g prawns (or 400g)
Iceberg lettuce (or the inner core of a normal lettuce)
Mayonnaise (diet) 5-6 tablespoons
Tomatpurée (or tomato juice) + milk (1 tablespoon purée or 2 teaspoons concentrate)
1-2 teaspoon Worcester sauce
1 teaspoon Cognac
Salt, pepper
Optionally 1 teaspoon chopped parsley

This is Maxim’s prawn cocktail in my mum’s interpretation. Just make the sauce, and serve in individual portions of lettuce, prawns and sauce.

150g mayonnaise (diet)
9% cream
2-3 tablespoones tomato juice
2 teaspoons English sauce
2-2 1/2 teaspoons cognac
Salt, pepper

Same procedure as above. Serves 6-7.
